Interview with Taylor Nakakihara
Taylor Nakakihara is a celiacs who is a lifestyle blogger. She is currently working full time as an executive assistant, going to school full time, and, in addition to working and going to college full-time, she trains for Spartan Races and is on track to run six Spartan Races this year! She was diagnosed with celiac disease on Halloween of 2013 and writes her blog about living life and living well, even with mental and physical obstacles to overcome.
We talk about Taylor's struggles with Celiacs, how she overcame them after being introduced to Spartan racing (and training for the race for a year) when her high school ceramics teacher gave her the info on Spartan. Her blog and her lifestyle reflect how you can really live your life to the fullest, even with Celiacs disease.
