I must admit that I have a selfish personal tea inception going on in my pantry with 57 different types of tea of which 10 percent are directly from Townshend’s tea house. Walking into Townshend’s tea house gives one the feeling of walking into a tea sanctuary where one can find more combinations of tea than one could drink in at least several spiritual reincarnations and an atmosphere which feels like tea nervana. 

 

In my interview with Polly, we chat about matcha tea origins, how she creates bubble tea, and the different types of apothecary tea Polly has available at Townshend's. We also dive into the creation of the tea house in Park City, Utah, why Polly decided to make this a place in the Junction area of Park City and the gluten-free baked goods she carries as options for those of us who are celiac to eat.
